Sea Salt Butterscotch Pretzel Cookies

I joke with my husband and tell him he’s a 90 year old man trapped in a mid-30s body because that man could each butterscotch all day, everyday.  Sign him up for Werther’s Originals and butterscotch shakes for every dessert.  

Me?  I’m a chocolate girl.  A sweet, give me a little salty, and throw in some crunch kind-of-girl.  The solution?  These delectable, irresistible cookies!


1 cup butter, softened

2 1/2 cups flour

1 teaspoon baking soda

1 teaspoon course sea salt

1 1/2 cup light brown sugar

2 eggs

2 teaspoons vanilla

3/4 cup butterscotch chips

3/4 cup semi-sweet chocolate chips

1 cup coarsely chopped pretzels

Additional course sea salt for topping


Preheat oven to 350 degrees.  Line baking sheet with parchment paper and set aside.  

In a large bowl, whisk together flour, baking soda, and sea salt.  Set aside.

In your mixer, cream butter and brown sugar.  Add in eggs and vanilla.  Slowly mix in flour mixture.  Slowly stir in butterscotch and chocolate chips.  Drop in pretzels and mix until just combined.

Spray the inside of a medium cookie scoop and drop dough roughly 2 inches apart on the baking sheet.  Bake for 10-12 minutes until golden brown.

Transfer to wire rack.  Sprinkle a small amount of course sea salt to the top of each cookie.
