I’m 5 1/2 months pregnant. I have two toddler boys. Snacking is the name of our game around these parts. 🙂 When my boys are constantly reaching for processed snacks out of our cabinet, I knew it was time to start making little snacks that are bite-sized, filling, and good enough that even my pickiest of eaters will go reaching for.
Enter: Peanut Butter Energy Balls.
This recipe took about 5 minutes to throw together with ingredients I had in my pantry. And my kids LOVE. THEM.
Simply mix together 3 wet ingredients and some salt.

Throw in some oats and chocolate chips. Oh? Is this why my kids love them?! 😉

Roll into 12 balls and place on a lined cookie sheet and refrigerate for 30 minutes. DONE! I didn’t buy a thing at the store and was done in possibly less than five minutes…with the “help” from a 2 and a 3 year old. That’s what I call easy.

Jacks and Colt were responsible for placing them on the cookie sheet. Oh the OCD in my had a hard time keeping them this way…

So we made it into a counting activity and everything was right in this world. 🙂

You will not regret giving these a try. Easy, quick, and a huge fan favorite here at the Kemper house. Happy Snacking!
Ingredients
- 1/2 cup creamy peanut butter
- 3 Tablespoons honey
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 1/4 cups old fashioned oats
- 1/3 cup chocolate chips
Recipe
Combine peanut butter, honey, vanilla and salt in a medium-sized mixing bowl. Add in oats and chocolate chips and combine together.
Cover a cookie sheet with wax paper.
Roll mixture into 12 small balls and place along wax papered cookie sheet. Refrigerate for 30 minutes.
Store in airtight container for up to a week in your fridge (but good luck keeping them around for that long!)

I have been making these for over a year and LOVE them – you should put a disclaimer on these – addictive to anyone, not just those energetic Kemper boys! I’m glad you shared this quick and easy recipe as I am confident it will be enjoyed by many now.
Yum!! Give me all the recipes like this! I’m always struggling to find “healthy” quick snacks for the girls that aren’t already pre packaged or aren’t too hard to grab and go.
