Happy Valentine’s Week!! Whether you’re deep in love, single as can be, dating the one of your dreams, or dating yourself for awhile, I hope you are feeling the love this week!
This is Jackson’s first year for a school Valentine’s Day party so we did like most of you did already this year, and headed out to your Target or Wal-Mart to look over the slew of Valentine’s lining the red and pink aisles. PJ Masks? Had it in our hands for a second. Mickey and the Roadster Racers? Almost made it into our cart. Sports cards? Thought we had a winner. But with total defeat, Jackson looked at me and said, “But mama, there aren’t any choo-choo ones.” Off to search for something of our own!

After a little searching, I found these precious Valentine’s created by Emily at Polka Dots Please. She made these “I Choo Choose You Valentine” cards and is giving them away as freebies!! Click on her link and print the PDF (comes in four per page). A quick cut and you’ve got precious little Valentine’s!

I purchased these mini Thomas & Friends trains from Amazon and used a small piece of tape to attach them to the Valentine’s. In a pinch and not enough time to get them from Amazon? They sell them at your local Wal-Mart and Target, too!

I’ve got some really cute Valentine’s food ideas saved on my Pinterest board (Growing Up Kemper) that I’ll be making on the actual day, but to get us through some of these brutal cold days, we made this adorable, and YUMMY, Valentine’s Chex Mix this weekend.

Valentine’s Chex Mix
Ingredients
3 cups Rice Chex
1 cup white chocolate chips
1/2 cup peanut butter
4 Tablespoons salted butter
1/2 cup powered sugar
Valentine’s sprinkles
M&Ms
Mini pretzels
Recipe
In a medium size bowl, add white chocolate chips, peanut butter, and butter. Microwave for 45 seconds. Stir until melted and smooth.
Add Chex to a gallon size storage bag. Pour in melted mix over the top and turn in your hands until completely coated. Add powdered sugar and shake until completely coated.
In a large bowl, pour out coated Chex mix. Add desired amount of pretzels, sprinkles, and M&Ms. Mix gently together and serve (and be ready to eat the whole bowl!) 🙂

Here’s to a beautiful start to your week with your loved ones!
