The heat hit and something turned in me. Suddenly, all I want is a fish taco, smothered in fish taco sauce, topped with crispy, fresh toppings. Side car me a beer and I’m feeling allll the summer vibes. ☀

So again this week I was meal planning and I started craving fish tacos. Light and fresh, crunchy and delicious fish tacos! I’ve got three go-to recipes that I circulate in between, one being a recipe I came up with that we’ve all fallen in love with around here, and the others that I’ve Pinned and probably made 20 times in the last year alone! The secret to my quick and easy recipes? Buy a bag of beer-battered fish fillets from your grocery store and save yourself the time and stress of coating and cooking your fish each time.
What’s for dinner this week?

DELICIOUS, EASY Baja Fish Tacos!
Ingredients
1 bag beer-battered fish fillets
8 fajita size flour tortillas
2 cups cole slaw mix
1/2 cup cilantro
1/4 cup lime juice
1/4 cup pineapple juice
1/4 teaspoon salt
1/2 cup mayonnaise
1 Tablespoon honey
1 Tablespoon chipotles in adobo sauce
Avocado, thinly sliced
Directions
Bake frozen fish fillets based on package directions.
In a medium sized bowl, combine cole slaw mix, cilantro, lime juice, pineapple juice, and salt. Set aside.
In a small mixing bowl, combine mayonnaise, honey, and chipotles in adobo sauce.
When fish is baked through, cut into inch long pieces. Lay out tortillas and top with fish, a large helping of your slaw mix, and top with a generous drizzle of your dressing. Lay avocado slices on top and enjoy!

A lighter option with that sweet taste of mango. The avocado-mango slaw is killer and sometimes you just feel better about eating tacos not smothered in a sour cream or mayo topping.
