I’ve been in a little dinnertime rut lately. Most days, 4:00 comes around and I’m in the absolute furthest mental capacity from making dinner. No motivation. No creativity. Just ready to already throw in the towel on the day, slip into my PJs, and tell everyone cereal is for dinner. 😉
So the fix I’ve found to help? The slow cooker. The holy grail of convenience. Put dinner in when you’re still fully seizing the day and it’s ready when you’ve gotten to the end of your rope, have been outside for hours upon hours, and sweated through two outfits.
We know summer is exhausting so let’s make it easier on ourselves with an awesome summer slow cooker meal for the whole family!
Ingredients
2 lbs. boneless, skinless chicken breasts
1 bottle of your favorite BBQ sauce (about 3 cups) – I used a 28 oz Sweet Baby Ray’s Hickory and Brown Sugar
1 oz dry ranch seasoning packet
4 burger buns – I love Pepperidge Farms Soft White hamburger buns for this recipe
Toppings: Ranch dressing, green onions, Monterey Jack cheese slices, chopped, crispy bacon
Directions
Place chicken in the bottom of slow cooker. Cover completely with BBQ sauce and ranch seasoning. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
When you’re ready to serve, shred chicken inside your slow cooker. Serve on your burger buns and top with cheese, crispy bacon, drizzled ranch dressing, and green onions.
