We’re already on our way into January but my monthly meal plan hasn’t even started yet. Are you feeling the lack of cooking motivation much like I am? I took time off from Christmas until January 4th and I feel like I really went on break during that time. Oh, we need groceries? Whoops! After cooking so many large meals for the holidays, it’s hard to get your mind wrapped around daily meals and stocking your pantry.
But alas, here we go! Another month, another round-up of great recipes that I’ve found to try this month among all our family favorites. And this January, I’m a little bit of comfort food, a little bit of healthy, and a little bit of decadent desserts. If those three things don’t scream January, right? Comfort and decadent for the cold temps and the nights in, while we are all trying to start off a little better with some healthy bites.
So here’s what I’m making this month…
Creamy Roasted Cauliflower Chowder
Healthy Chicken and Rice Casserole
P.F. Chang’s Chicken Lettuce Wraps
Sweet Potato Enchiladas With Sweet Corn Crema
Roasted Tomato Basil Soup
I got an air fryer for Christmas this year. Guys, why was I not told how good an air fryer actually was?! Why did you hold out on me like that? It has been a game changer with every recipes I’ve tried. The BEST french fries, brussel sprouts, and THESE wings I’ve ever tasted. I’m hooked and I can’t wait to come up with some fun recipes for you soon!
Air Fryer Chicken Wings
Don’t these seem like a perfect addition for your football playoff games this month?
Homemade Stuffed Pepper Soup
Slow Cooker Garlic Herb Pot Roast
Crispy Cauliflower Tacos
Sea Salt Chocolate Chip Butterscotch Pretzel Cookies
Salted Caramel Skillet Cookie
