This is one of my family’s very favorite weekday meals, and for such good reason! So quick, so hearty, and great as leftovers for the hubs lunch the next day. With simple ingredients you have on hand in your kitchen, this meal can be ready to go in less than 30 minutes.
Serve up with some roasted veggies and you’ve got yourself a healthy, hearty weeknight meal straight from my kitchen to yours. Happy Eating!

Ingredients
1 package Sweet Hawaiian rolls
4 tablespoons butter
1 teaspoon garlic powder
1/2 lb. chicken breasts, pounded to 1/2 inch thickness
Olive oil
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
1 cup shredded Mozzarella cheese
1 cup spaghetti sauce
Recipe
Preheat oven to 375 degrees. Slice Hawaiian rolls in half and lay out open on a large cookie sheet. In a small microwaveable bowl, melt butter. Mix in garlic powder and brush over the insides of the tops and bottoms of Hawaiian rolls. Bake for 5-7 minutes, until very lightly brown around edges.
Meanwhile, heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper to your taste. Cook in skillet until chicken is no longer pink in the center, roughly 6 minutes on each side.
When chicken is cool to touch, cut into pieces just larger than the Hawaiian rolls. Set aside.
On the bottom half of lightly browned Hawaiian rolls, sprinkle grated Parmesan cheese. Top with a teaspoon of spaghetti sauce, then your piece of chicken, and finally another teaspoon of spaghetti sauce. Sprinkle on Mozzarella cheese on top and finally place top of Hawaiian roll to complete your sandwich.
Put cookie sheet back in the oven for roughly 4-5 minutes until cheese is melted and the sandwich is heated through. Serve immediately with your favorite veggies!
