Here we go! Get your groceries ready and let’s get started on day one of our Summer Detox Cleanse!
Breakfast – Strawberry Peanut Butter Overnight Oats
1 cup oats
1/2 banana
2 tablespoon peanut butter (or almond, cashew, sunbutter, etc.)
1/2 cup strawberries, chopped
1 cup unsweetened almond milk
Toppings: Cinnamon, strawberries, banana, granola
Chop banana and strawberry.
Combine all ingredients in a bowl until mixed well. Seal and place in refrigerator for up to 3 days.
Top with your favorite ingredients and enjoy!!
Lunch – Quinoa and Sweet Potato Kale Salad
2 handfuls kale
1 sweet potato, cut into 1/2″ pieces, cooked
1 avocado, cut into 1/2″ pieces
1 cup quinoa, cooked
1 teaspoon chia seeds
1 teaspoon Trader Joe’s Everything Bagel seasoning
Olive oil
In a bowl, massage kale with olive oil. Top kale with sweet potato, avocado, and quinoa. Top with chia seeds and Everything Bagel seasoning and enjoy! Bon Appetit!
Dinner – Veggie Burger
1 can chickpeas, rinsed
1 cup frozen peas
1 cup frozen corn
1 cup quinoa, cooked
1 clove garlic, minced
1 sweet potato, cooked
1 teaspoon coriander
1/4 cup parsley, finely chopped
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
Heat oven at 375 degrees. Prepare cookie sheet with parchment paper or spray with olive oil spray.
Mix all ingredients in a food processor or blender until well combined and blended.
Scoop about 1/4 cup of mixture and shape with your hands into patties. Place on cookie sheet. Bake for 30 minutes. Flip and bake an additional 20 minutes until browned on both sides.
Serve with zucchini coins topped with fresh lemon, cooked in oven at 375 for 15 minutes.
